This is what experts at the Digital Foundry portal say. Doubts are expressed due to the console's graphics capabilities.

The first (and currently last) GTA 6 trailer pleased with the visuals in terms of environment detail and ray tracing. However, Digital Foundry analysts doubt that the Xbox Series S console will be able to handle such a level of graphics - they believe that it will only be able to support ray tracing at a resolution of 720p.

It would seem that you can simply turn off ray tracing. But this will not be so easy, since this will require serious artistic reworking of the project, which will entail the expenditure of additional resources. And the creators are unlikely to take this step.

On the other hand, Rockstar always optimizes its titles well on all platforms, with rare exceptions. Therefore, we can expect that the company will cope with all the difficulties. However, the average graphics capabilities of the Xbox Series S have not gone anywhere.

Interestingly, most GTA Online users currently use the PlayStation 4 console to play, and the transition to GTA 6 will encourage them to switch to more powerful solutions.
